WINEMAKING
The marcs come mainly from the vineyards of Ribona (Maceratino), Trebbiano, Merlot and Sangiovese cultivated using organic farming methods. They are separated from the must-wine by soft pressing and still dripping, they are sent for distillation. This is the best way to preserve the primary aromas on the skins. The meticulous work of the master distiller and the use of precious copper stills do the rest. The distillation takes place by steam with a discontinuous method. This is the method we use to make grappa have such valuable characteristics.

FOOD PAIRING
