WINEMAKING
Cryomaceration of the whole grapes at 0°C for 72 hours in cold storage,destemming and cooling. Soft pressing 0,2 bar with yield in free-runjuiceof 55 %. After a static decantation for 48 hours, the must has been racked to remove the limpid part and left to ferment with selected yeasts. The fermentation at controlled temperature of 11/12° C continued for 25 days, and then a racking was done to remove the heavy lees whereas wine remains to age in steel on the noble wine lees for 6 months with weekly “battonage

TASTING FEATURES
The wine shows a golden yellow colour with greenish hints. A gently aromatic base followed by mineral notes. All enriched with soft hints of white Nectarine peach and exotic nuances. A generous, soft and fresh palate
