WINEMAKING
Maceration of grapes at 0 degrees for 24 hours, with the following destemming and refrigerating phases. Soft pressing at 0.2 bar with yield in flower of the must of 55%. the must, after a static decantation of 48 hours, is poured out of the clear part and ferments with the aid of selected yeasts. The fermentation lasted 25 days at a controlled temperature of 11/12 degrees, then a coagulation was carried out with the elimination of coarse lees while the wine remains in stainless steel on noble lees for 3 months with weekly “battonage”
PRODUCTION
Protein-based and tartaric stabilisation.
