TIME OF PICKING
The time of picking is at the end of August for the Merlot and at the end of September for the
Sangiovese. This picking is harvested by hand, collected in small crates, with a selection of the best
bunches
WINEMAKING
The wine-making involves the grapes’ destemming and a subsequent fermentation with the
presence of peels for 18 days. Drawing off and soft pressing at 0.2 bar with yield in flower wine of
65%. After the malolactic fermentation is completed, the wine is poured for several months in wood
to give more complexity

FOOD PAIRING
It matches, generally, with red entrées and roasted meat. It is excellent for accompanying seasoned
cured meats or cheese. Serve this wine at 18 degrees and open the bottle an hour before serving it
